yes, there are folks who configure/build pnetcdf on the mac.   

Which MPI are you using?   Your own or one that came with the system?

You should just be able to configure with "--with-mpi=/path/to/mpi".
For example, --with-mpi=/usr  or
--with-mpi=/Users/haoguo/mpich2-1.1.0
